Due to problems with my eyes and other complications, I haven't blogged in quite some time. Tonight I decided to share one of my latest experiences in the kitchen.

Every week I have a wonderful opportunity preparing meals for a wonderful family of four who are very dear friends to my youngest daughter and her family.  The kitchen is so outstanding that a person like me who has a passion for cooking and  creativity can, truly, let the imagine run wild.  Well, maybe not wild, but, I do zone out, cut myself off from the world around me and become creative and totally into my craft.

Yesterday, I had Oven Spare Ribs on my menu. This is a very east dish for me to prepare and I know exactly how the palettes are of my clients/friends provided I purchased all of the ingredients. Well, after making a list, checking it twice, shopping at three stores, I arrived at the premises, unpacked the bags and organized each course to be prepared only to find that I forgot the most important ingredient to make the Spare Ribs they way they were accustomed to having them. Going to the store wasn't an option I was already in cooking attire ovens going, music going, mood set, kitchen set! No way was I going back out in the rain. The main part of this situation is, when you are a personal chef for someone and you prepare a delicious dish that becomes a favorite, you get constant requests for that same dish and it is expected taste the same each time. Some things can be viewed as disasters or blessings.  I choose the blessing and turned it  into one great creation. The rub that I thought I needed so desperately turned into a situation of  me creating on of the most delicious rubs that I've ever made. It is a big hit!

I got my food processor out and made enough so that I can make sample bottles. Not only that, but, I  had already purchased an extra slab of baby back for family members to enjoy which I turned into a sampler slab for potential clients. So far the feedback has been very positive. After I make a couple of  additions to it, I have decided to package it for holiday gifts for a few close friends and family members.  Who know, if all feedback comes back the way I anticipate, this was not a mistake, but, instead, a blessing.

I choose not to share it just yet.  Look forward to hearing from me after the holiday season with a slamming savory rub that will knock any meat into a home run.
